Bottled at a potent 46% alcohol by volume and non chill-filtered to bring out the aromatic smoke and carefully crafted flavours. Try neat, on the rocks, in a whisky soda highball or in a tailor-made old fashioned.
The flavours of peat smoke always lead to thought provoking descriptions from fans of this whisky style; from beach bonfires, tarry ropes and medicinal aromas. Wemyss Malts aim was to evoke these smoky descriptions whilst at the same time be careful not to overwhelm with what can be for some, drying and intense smoke.
Peat Chimney is carefully balanced between fresh citrus flavours and nuanced smoke. Achieved by wisely layering multiple regions of single malt into this secret recipe. Dried pear, fresh lime and barley sugar on the palate soften and balance the waves of smoke.
This whisky is a guiding hand into the atmospheric world of smoky flavours whilst also being an exercise in harmony, subtlety and balance."

CHEESE: Maida Vale; made in Berkshire by the Wigmore family. Maida Vale is washed in Treason IPA from Uprising Brewery. Buttery in texture, it has a fruity kick from the hops and a tangy edge.
MEAT: Any smoked seafood, or meaty fish is a match made in heaven for Peat Chimney. Smoked Duck or Venison also pair well.
DESSERT: Dark chocolate with a high cocoa content works well as does, surprisingly, lemon cheesecake.
BEER: Brewdog Punk IPA. This is a bit of a chalk and cheese pairing as the crisp citrus notes from the hops in Punk IPA will cut through the rich smoke of the Peat Chimney almost like eating a grape after having some strong blue cheese. Also both the Peat Chimney and Punk IPA have some lemon notes which will complement each other.
Base malts: 58% vatting of selected Speyside singlemalts
Support malt: 4% support of peated Highland malt and 4% support of peated Highland Island malt
Signature malt: 34% heavily peated Islay malt
Die Familie Wemyss, gesprochen Weems, Wemyss Malts ist ein Familienunternehmen mit Sitz in Edinburgh. Als unabhängiger Abfüller werden unter „Wemyss Malts“ Einzelfaßabfüllungen, selektiert in Zusammenarbeit mit Charles MacLean, mit merkwürdigen Namen wie Fennel Finale, Fenchelfinale oder Persian Anise auf den Markt gebracht. So soll der cask character der Abfüllung herausgestellt werden.
Zum Wemyss Portfolio gehört auch eine Serie von handcrafted blended malts, die „Spice King“, „Peat Chimney“ und „The Hive“ heißen, ausgesuchte Einzelfaßsabfüllungen so ziemlich aller verfügbaren schottischen Destillerien, sowie der Premium Blend „Lord Elcho“.
Schon länger in der whisky Welt bekannt und unter anderem als unabhängiger Abfüller unterwegs, kaufte sich Wemyss 2014 in das Projekt ein. Damit wurde die Finanzierung sicher gestellt, Doug Clement hat aber nun doch keine eigene Destillerie, dennoch steht sein Name mit dem Zusatz Founder auf den Etiketten.

Die nun arbeitende Kingsbarns Distillery verwendet lokale, in Fife angebaute Gerste und Wasser aus einer Quelle 100 m unter der Destillerie. milling, mashing, fermentation und distilling fill findet hier statt und ergibt grade mal 24 casks pro Woche von einem new make oder spirit von dem man sagt er sein fruchtig und floral. Da er aber auch für mindestens drei Jahre in oak casks reifen muß, verkauft man ihn bereits jetzt als Kingsbarns Spirit Drink und wartet bis zum ersten single malt whisky im Frühjahr 2018 auf den first dram!
Der Betrieb begann im Januar 2015 und Januar 2019 gabs den ersten single malt whisky.
